Pre-VCE Food Studies

Take your food skills to the next level! Pre-VCE Food Studies is designed to prepare students for success in VCE Food Studies by combining practical cooking experiences with the theory that underpins food production, nutrition and consumer choices. Students will investigate how food impacts individuals, communities and the environment while developing the knowledge and skills needed to confidently plan, prepare and evaluate a wide range of dishes. 

Throughout the course, students will explore current food issues, examine the relationship between nutrition and health, investigate food sustainability and ethical food production, and apply the design process to create food solutions that meet specific needs. Practical lessons provide opportunities to refine cooking techniques while building independence, organisation and confidence in the kitchen. 

Students will develop skills in: 

  • Safe and hygienic food handling practices. 

  • Advanced knife skills and a range of cooking techniques. 

  • Meal planning and recipe modification. 

  • Nutrition and healthy eating principles. 

  • Food science, including the functional properties of ingredients. 

  • Food sustainability, ethical production and reducing food waste. 

  • Food safety and quality assurance. 

  • Time management and kitchen organisation. 

  • Evaluating food products using sensory analysis. 

  • Investigating food trends and consumer influences. 

  • Applying the food design process to solve real-world food challenges. 

  • Presenting and evaluating practical work using appropriate food technology terminology. 

This subject is ideal for students who enjoy cooking, are interested in how and why food behaves the way it does, and are considering pathways into VCE Food Studies, hospitality, nutrition, health sciences or other food-related industries.
